Buttermilk Blueberry Pancakes

Shrove Tuesday aka Pancake Day immediately preceeds the first day of Lent (Ash Wednesday) and is celebrated by eating pancakes, a day of gorging before the fasting period of Lent.

2 cups Plain Flour

1/4 cup Sugar

3 tsp Bicarb

2 Eggs

2 cups Buttermilk

1/4 cup Melted Butter

1 tbsp Blueberry Powder


1In a large bowl sift together the flour, sugar, bicarb and salt. Beat the eggs with buttermilk and melted butter. Combine the wet and dry ingredients into a lumpy batter, try not to over mix the batter. Heat a non stick frying pan and spoon 1/3 cup of batter into the pan, sprinkle with some Blueberry Powder and swirl through the batter using a skewer. Cook 2-3 minutes each side.

2For a fun variation for the kids (small or big) mix a little powder into the batter. Blueberry powder is a natural food dye and you wont need a lot. Have fun playing with different hues or ways to add the powder.

Blueberry Powder is handy for use in this recipe particularly when blueberries are not in season or you could add fresh blueberries and some powder to add color.
